NOIA started with a simple frustration:

I knew there had to be a better way and I was stubborn enough to go looking for it.
What followed was a 3.5-year journey of trial, error, obsession, and countless batches of chocolate made completely from scratch. Most things didn’t go smoothly.
But through passion, persistence, and a refusal to compromise, NOIA slowly came to life.
Why this mattered to me
Before NOIA ever became a brand, it was personal.
I spent over 8 years living with chronic gut issues which ended up being bowel endometriosis. Navigating chronic pain, inflammation, and a body that felt reactive to more foods than it didn’t. Like many people, I became deeply aware of how ingredients affected how I felt, especially when it came to dairy, sugar, and highly processed foods.
Chocolate was one of the hardest things to give up and one of the most frustrating to replace. Most “better-for-you” options were packed with artificial sweeteners and shortcuts, or tasted nothing like real chocolate. And regular chocolate often left me feeling worse.
That experience shaped NOIA more than anything else.
It’s why I care so deeply about ingredients.
It’s why I refuse artificial substitutes.
And it’s why NOIA was created to be chocolate you can actually enjoy, not just tolerate.
Because chocolate shouldn’t feel like a compromise.
